Serves 6 to 7


6 cups chicken stock

1 tablespoon minced garlic (3 cloves)

11/2 cups Parmesan cheese (can be replaced with your preferred cheese)

1 1/2 cups Polenta

6 tablespoons creme fraiche (can be substituted with cream)

3 tablespoons unsalted butter

Salt and Pepper


Combine the chicken stock and garlic in a large saucepan and bring to a boil.

Reduce the heat to a simmer and slowly add the polenta, whisking constantly to make sure there are no lumps.

Switch to a wood sppon, add 11/2 tablespoons salt and 2 teaspoons pepper and simmer over very low heat for 5 -10 minutes, stirring almost constantly, until thick.

Be sure to scrape the bottom of the pan thoroughly while your stirring.

Off the heat stir in the Parmesan, creme fraiche and butter.

Season to taste and serve hot.
